What Is the Piston in the Group Head?

When you pull the lever down, the piston compresses water through the coffee grinds in the portafilter. Driven by your hand rather than electronics or pumps, the piston in manual lever machines such as the Zacconi Riviera is what generates the magic.

The piston seals (gaskets) gradually wear out or you might have to regrease or deep clean the cylinder. Next you will need to restore the piston correctly to ensure no leaks or pressure loss is there.

Tools & Resources You’ll Need:

  1. Food-grade silicone oil (like Molykote 111)
  2. New piston seals (you need it if changing the piston)
  3. A flathead screwdriver
  4. Allen key (should your model call for it)
  5. Clean microfiber cloth

Installing Piston Step-by-Step Process:

Step 1) Prepare All Things

  • First of all, unplug the machine (necessary step).
  • Disassemble the lever group: Take off the lever arm and top cap, held by the pivot pin or screws. If relevant, take off the group head sleeve.
  • Inspect and clean every component: piston, shaft, cylinder, and seals. Clear any past-due coffee residue or oil.

Step 2) Greasiness the Piston Seals

-> Put a tiny bit of food-grade silicone grease to the piston seals. This will help in ease the piston into the cylinder and increase the lever pull’s smoothness.

An Espresso Expert Kevin’s Note: Don’t overindulge & too much grease will clog your brew path.

Recommended Silicone Grease: Molykote 111

Step 3) Correctly position the piston

Generally, the piston consists of two seals separated on a metal ring and one end of a rod or shaft having threads for the lever arm.

Since the seals face downhill toward the portafilter side, they must generate pressure during the downstroke. Align it equally by sliding the piston partially into the group cylinder.

Step 4) putting the piston inside the group head

  • Hold the piston shaft tightly and softly press it into the group head
  • The seals may object somewhat and this is natural. Give some hard pressure yet consistent force.
  • If it seems too tight, review the seal size and gently regrease.
  • Once in place, carefully spin the shaft to ensure it seats uniformly inside.

Step 5) Reinstall Lever Assembly

  • Reversing the lever back through the top bracket, link it to the piston shaft.
  • Make sure the pivot pin or screws are tight.
  • Try the lever action; it should move smoothly but with resistance up and down.
  • Remove and adjust the piston if it seems scratchy or catches.

Step 6) Test the Water Now

-> Turn on the machine and fill the boiler.

-> Let it heat up and try dragging a shot with just water and not coffee.

-> Look for group head leaks or around the seals.

Congratulations! If everything is sealed then you have effectively rebuilt the piston!

Kevin’s Advice:

-> If you use it regularly, replace your piston seals every 6 to 12 months.

-> Your lever is calling for fresh grease if it squeaks.

-> Nothing should be overly tightened and old machines are fragile!

FAQ’s: Piston Installation on Zacconi Riviera

1) Should my piston seals need to be replaced?

If you find leakage of water during the pull or loss of pressure, It’s time to replace the seals as well. Check the gaskets also if the lever seems very flexible or sticky.

2) On the piston, what kind of grease shall I use?

Use food-safe, heat-resistant silicone grease (such as Molykote 111). Never use petroleum-based lubricants; they can compromise taste and ruin seals.

3) If old seals looks good, may I reuse them?

You can use it but personally not recommended by me. Old seals may not work well even if they appear good and they also gets harden.

4) What should I do since my piston won’t go in?

First check whether the seals are lubricated and aligned. To expand the cylinder and ease insertion, gently warm it with a hair dryer but never do this while plugged in.

5) With ordinary residential use, how often should I service the piston assembly?

Atleast once a year. Commercial settings or heavy users shall go for servicing in every 3 months.
